If the name’s a tad pretentious, the mission of Potager is anything but. “Simple cooking, simple eating, simple living,” is chef/owner Teri Rippeto’s slogan, which Potager backs up with a promise to grow as much of its own produce as possible and to source ALL the rest from local farmers from May to October, when such a lofty goal is at least possible, if not easy. The Red Wagon Farm beet risotto is as pretty as it is delicious, and it tastes like a dish you might expect to find at Chez Panisse or the French Laundry—paired with a glass of biodynamic wine, of course.
