The menu is peppered with island treasures—pumpkin, lemongrass, spiny lobster and conch. But true to Ripert’s commitment to responsible fishing, the restaurant only buys its seafood from local fishermen who bring the catch of the day to the resort’s dock. Both restaurants work with organizations such as Seafood Watch and Oceana for the most current information on restrictions.
