Chef Alvin Leung, Jr. is known for his rock ‘n’ roll demeanor and adventurous cooking style, serving what he calls “X-treme Chinese Cuisine” at Bo Innovation in Hong Kong. Applying molecular gastronomy French and Japanese cooking techniques to centuries-old Cantonese recipes, Leung aims to break preconceived notions of what Chinese food looks and tastes like. Choose from a few different tasting menus (a la carte ordering is not available) that feature signature dishes such as xiao long bao (soup dumplings), hairy crab soufflé with Jiangsu vinegar and taro-crusted smoked quail’s egg with caviar.
