WHY: Six giant saltwater tanks provide a home away from home for the lobsters, crabs, fish and shellfish served in seven of the hotel’s on-site restaurants and lounges. Each tank can hold a little more than 300 gallons of water and be set to the ideal temperature for its inhabitants, whose stay is very limited—the hotel goes through about 500 pounds of seafood daily.
