Until 2007, absinthe was banned in the United States. In Philadelphia you can now taste this 19th-century elixir at the second-floor lounge of Time restaurant, aka the Bohemian Absinthe Lounge. For the full ritual, they'll prepare a two- or four-person tower with a sugar cube atop a slotted spoon resting on your glass through which they pour chilled water. You can also choose from 75 scotches and other whiskeys while enjoying live jazz or local DJs spinning in the shabby-chic Parisian-style salon.
