If you're looking for a great izakaya, chef Toshihiro Wada's Bird Land should be at the top of your list. In terms of concept, his menu is straightforward: lots of grilled skewered meat, focused largely on poultry items. It's an izikaya flung through a yakitori prism. Diners sit at the intimate bar (make a reservation online to secure your spot), looking on as the meal is grilled over Bincho charcoal. From chicken thigh to gizzards and crispy skin, every part of the bird can and will be served. The liver pate is a big winner, and the truly adventurous should try the gamecock sashimi. Yes, that would be raw poultry.
