One of Amsterdam’s best offerings for a proper brunch, Little Collins does excellent sweet (the coconut crumbed French toast with lemon curd and baked apple is a must) and savory (slow-roasted pork belly, crackling and home fries, topped with a fried egg!) dishes, plus top-notch Bloody Marys—served four different ways. Little Collins is open for dinner on Thursdays and Fridays, too, specializing in sharable plates that pack lots of flavor, like raised beef brisket with smoked chili adobo paste, chimichurri and white bean puree.
