Chef Urvin Croes honed his skills at a Michelin-starred restaurant in the Netherlands before opening this modernist eatery on the island in 2012. The Aruba-native is known for his inventive dishes that utilize locally sourced ingredients, fresh seafood and homegrown veggies. Start with the Aruban salad—with more than 30 components, it’s a show stopper. Main courses include cobia with homemade yakitori sauce, snapper with creole relish and plantain chips, and confit Cornish hen with cipollini onions and vanilla-bacon jus. The Aruban basil panna cotta with watermelon pico de gallo is a refreshing way to end the meal.
