The seafood at Colt & Gray is absolutely inspired, from the swell-seasoned salmon tartare to the lobster bangers, which are rich, buttery and fun to bite into. But those compiling a “bucket list” of envelope-pushing menu items gravitate toward the crispy pig trotters, which are indeed made from pigs’ feet courtesy of local purveyor Long Family Farms. Chef/owner Nelson Perkins’ cooking philosophy combines the straightforward and the utterly surprising, and the space hues to that philosophy, as well, with its old-fashioned gents’ club ambiance combined with über-hip décor.
