Although the Sapphire Hotel is no longer a brothel or a hotel as the name suggests, the alluring come-hither vibe of this sexy lounge remains. The dark red walls and candlelit lighting make this late-night spot all the more intimate. Once a turn-of-the-century hotel with rent-by-the-week residence for sailors and ladies of the night, now the place is all about creative cocktails with interesting names like Trophy Wife (a pear and ginger martini made with pineapple infused vodka) and Apricot Blond (cedar steeped bou-rye, fig steeped vermouth, Zwack, orange bitters). There’s also a nice assortment of sake, which compliment the salmon corn cakes with stoneground mustard & onion aioli.
