Tucked inside a converted convent, the Auld Alliance claims to have the largest whiskey collection in Southeast Asia. Evoking an old-school gentlemen’s club with leather couches and wooden beams, the bar’s library-like shelves show off at least part of its 1,000-bottle collection, which includes vintages as far back as 1936. If you’re not a whiskey drinker, there are 40 kinds of absinthe, too, served in a traditional brouilleur.
