Chef Bobby Flay really beefed up the dining options at The Cove Atlantis when he opened an outpost of Mesa Grill in 2007. The upscale restaurant features Flay’s signature Southwestern cuisine with dishes that incorporate local Bahamian ingredients. To start, try the fried conch with mango relish or the shrimp and garlic corn tamale—both will have you wanting more. Entrées include a few premium steak courses, along with a 16-spice chicken and a fantastic vegetarian chile relleno with roasted eggplant and manchego cheese.
