White tablecloths and an exhibition kitchen welcome visitors as they enter this elegant restaurant. Owner Mark Tarbell received wine training at the l'Academie du Vin and culinary know-how from La Varenne Ecole du Cuisine, both in Paris, then became the youngest food and beverage director of any Five Diamond property in the world when he started at The Boulders resort at the ripe age of 23. Nominated for “Best Chef in the Southwest” by the James Beard Foundation in 2001, he has cooked for the Dalai Lama, Muhammad Ali and Clint Eastwood.
