Named after a recently resuscitated breed of heritage cattle, Čestr (like “Chester”) focuses on resuscitating the heritage of great Czech cuisine, especially beef, serving classic cuts of steaks, roasts and ribs in an airy, modern bistro just off Wenceslas Square. Look for a list of rarely seen, high-quality white wines from Moravia, the country’s eastern half, as well as great slivovice, the local plum brandy.
