October and November mark Shanghai’s season for Hairy Crab. In the Chinese language, the phrase "the first one to eat crab" refers to an insightful person who dares to take risks and try something new. Hairy crab has become a big part of Chinese culture and goes hand-in-hand with a Ying-Yang balance, the traditional Chinese pairing that complements a "hot" dish with a cool wine, or vice versa. Believed to have a cold nature, the hairy crab is traditionally paired with Shaoxin Yellow Wine, a wine that has the ability to warm the body and balance the hot-cold polarity. If you want the best of the best, take a day-trip to Yangcheng Lake, where the floating restaurants serve these little green creatures fresh from the water. Don’t be alarmed if you see them before they are cooked, as the long hard hair spiking from their legs and constant spitting of foam only means they’re authentic hairy crab and they’ll yield some of the best crabmeat you’ve ever tasted.
