Chef André Chiang honed his craft under Michelin-starred chefs such as Joel Robuchon, and made a name for himself as chef of the luxe Jaan Par Andre (now Jaan), which he left to open this intimate eponymous restaurant in 2010. His Asian-inflected French food is governed by “octaphilosophy”—eight characteristics that include memory, texture and terroir—which translates into dishes such as shrimp with sea kale granite and charcoal consommé.
