Sure dinner at the three-Michelin-starred Quintessence may come with a hefty price tag, but this is the type of meal that gastronomes build an entire trip around. Chef Shuzo Kishida, who worked at L’Astrance in Paris before opening Quintessence in Tokyo in 2006, is known for his haute French cuisine and unmatched attention to detail. Both the seven-course lunch and 13-course dinner change daily at the chef’s whim, so arrive hungry and with an open mind.
