When this placed opened in 2009, it introduced a new concept to Madrid’s already robust dining scene: the gastrobar, a lively restaurant with really great food at a good price without the stuffy attitude. Several years later, it’s still serving contemporary tapas to hoards of happy diners. Choices include riffs on the classic gambas al ajillo (shrimp with garlic), a ham croquette you’ll never forget, stilton cheese smoked with lavender, and pineapple-crusted foie gras.
