Opened by a trio of talented veterans of the Montreal food scene, Les 400 Coups is the best choice for modern cuisine. Spring for chef Marc-André Jettée’s ambitious tasting menu, with dishes such as chicken liver mousse with pickled apples and Brussels sprouts, roasted guinea fowl with parsnips and pecans, and scallops and suckling pig with veal stock dressing. By all means, do not pass up pastry chef Patrice Demers’ intricate desserts (a recent winner was candy cap mushroom panna cotta with spice cake, apple, quince, cranberry and pumpkin seeds).
