Brittany-born chef Alain Passard works wonders with vegetables, a specialty uncommon in Paris’ Michelin-starred restaurants. He raises organic produce on his six-acre biodynamic farm southwest of the city, often harvesting the vegetables the same day they are served in the restaurant. Although meat and seafood are still present on the menu, the real magic lies in Passard’s flavorful, inventive vegetable creations.
